Salmon Steak of The Day

From Dorothy McNett's recipes at Cooking for one or two? This is a very great way to cook 1 - 2 servings for moist delicious fresh salmon, or any other firm fish steak. And of course searing the salmon in a saute pan on the burner is great as well! It is the drizzles of extra virgin olive oil that gives either way a grand taste and look. Enjoy!

1 salmon steak per person
pinch of sea salt
sprinkle of freshly ground pepper
fresh or dried dried basil, snipped
1/2 teaspoon extra-virgin olive oil per steak
zest of lemon or orange
paprika, sweet or smoked

fresh butter lettuce leaves
extra virgin first cold pressed olive oil for drizzling

Wash the fish and pat dry with paper towel. Place on a glass or ceramic plate. Sprinkle with salt, pepper, basil, olive oil, and zest. Sprinkle with a little paprika. Cover with a piece of waxed paper. Cook in microwave, using 2-3 minutes per average sized steak as a guide, or until fish flakes easily. Arrange lettuce leaves on serving plates, place salmon on top of the leaves and serve with olive oil for drizzling on the top.
