Biscuits

From Dorothy McNett's recipes at www.dorothymcnett.com. These are wonderful freshly baked. For a special way to serve, slice biscuits open and arrange on a serving platter. Spread with a little mayonnaise or horseradish sauce and then pile on some fresh baby organic greens and if desired some smoked salmon, etc. Serve as open faced sandwiches for a special brunch or lunch treat.

3 cups all-purpose unbleached flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1 teaspoon sea salt
1/4 - 1/2 teaspoon freshly ground pepper, or dried herbs as desired
1/2 cup unsalted butter, chilled
3/4 cup buttermilk

mayonnaise or horseradish sauce
fresh greens
sliced tomatoes and/or smoked salmon, etc. as desired

Preheat oven to 425 degrees. In food processor with steel chopping blade in place, whirl together the flour, soda, cream of tartar, salt and pepper to mix thoroughly. Add the butter and pulse the machine to cut the butter into small chunks, about the size of large peas. Quickly add the buttermilk so that the mixture is stiff, not sticky. Remove to counter and with a little flour on your hands and on the counter, GENTLY knead about 10 times to form a nice ball of dough. Roll out about 1/2" thick. Cut with cutters and place on a baking sheet. Bake 12-15 minutes, or until tops are lightly browned. Serve immediately as biscuits, or slice and arrange greens and cooked meats, etc on top and serve open faced.
