Sauteed Turkey Cutlets

fresh turkey cutlets, sliced into medallions
Slice the turkey into about 1/4 inch slices. Dredge with a mixture of flour, salt, and pepper and then whatever else grabs you. Heat a saute or fry pan, add the oil or butter and when sizzling but not burning, add the cutlets and cook about 3 minutes on each side, or until done. Taste and then correct seasonings, if needed.
