Sauteed Turkey Cutlets

From Dorothy McNett's Recipe Book at Season these as desired, experimenting with your taste buds...

fresh turkey cutlets, sliced into medallions
2 tablespoons flour
1/2 teaspoon fine sea salt
1/4 teaspoon freshly ground white pepper
and then whatever...lemon, basil, thyme, rosemary, sage, orange zest, garlic, oregano, red pepper flakes, soy..
1-2 teaspoons extra-virgin olive oil or butter, or both

Slice the turkey into about 1/4 inch slices. Dredge with a mixture of flour, salt, and pepper and then whatever else grabs you. Heat a saute or fry pan, add the oil or butter and when sizzling but not burning, add the cutlets and cook about 3 minutes on each side, or until done. Taste and then correct seasonings, if needed.
