Potato Strips with Smoked Salmon
From Dorothy McNett's Recipe Book at www.dorothymcnett.com. If you smoke your own salmon, it will not wrap like the thin strips of dry smoked salmon, so simply make a stack of a potato slice and a salmon slice, secure with cocktail picks and arrange on a beautiful platter.
1. Variation one: Wash and peel russet potatoes. Slice into strips. Place in microwave "ugly pot" or "beautiful pot", cover, and microwave on high, using 5 minutes per pound of potatoes as a guide. When cool enough to handle, wrap each strip with a very thin slice of smoked salmon. For variations in flavors, sprinkle potatoes with seasonings such as lemon, paprika, hot chili mixtures, garlic blends, finishing sea salts...
