Potatoes In Coats

From Dorothy McNett's recipes at www.dorothymcnett.com. If you smoke your own salmon, it will not wrap like the thin strips of dry smoked salmon, so simply make a stack of a potato slice and a salmon slice, secure with cocktail picks and arrange on a beautiful platter.

1. Variation one: Wash and scrub russet potatoes. Slice into strips. Place in a glass or ceramic batter bowl, cover with a glass or ceramic plate or lid, and cook in microwave using 5 minutes per pound of potatoes as a guide. (about 3 minutes per potato) When cool enough to handle, spread with just a tiny bit of sour cream and wrap each strip with a very thin slice of smoked salmon. For variations in flavors, sprinkle potatoes with seasonings such as lemon, paprika, hot chili mixtures, garlic blends, finishing sea salts...

2. Variation two: For a great presentation, use yams or sweet potatoes. Scrub each one very well, peel as necessary.. Place on a glass or ceramic plate. Cook in microwave using about 3 minutes per potato as a guide. Allow to cool, slice about 1/4 inch thick. Arrange on a beautiful platter, spread each slice with a dollop of sour cream or Devonshire cream and then top with a chunk of smoked salmon. Fabulous!
