Apple Cinnamon Vanilla Compote

From Dorothy McNett's recipes at www.dorothymcnett.com. Simply applesauce flavored up a bit and served as a dessert! Makes about 4 - 5 servings.

4 apples
1/2 cup raw sugar
1/2 teaspoon cinnamon
1/4 teaspoon red chile pepper
1 teaspoon real vanilla extract or vanilla bean paste
1/4 teaspoon sea salt
3 - 4 biscotti or other crispy cookies or cakes
fresh mint leaves

Wash and core the apples and cut into pieces. In a glass or ceramic batter bowl combine apples, sugar, cinnamon, pepper, vanilla, and salt. Cover with a glass or ceramic plate or lid. Cook in microwave 4 minutes. Stir and if needed cook another 1-2 minutes until apples are tender. Set aside to cool. To serve, crumble the biscotti into stemmed glasses or other nice serving bowls and spoon on the apple mixture. Garnish with fresh mint leaves.
