Apple Cinnamon Vanilla Compote

Wash and core the apples and cut into pieces. In a batter bowl, combine apples, sugar, cinnamon, chipotle,vanilla, and salt. Cover. Microwave on high 3 minutes. Stir and if needed, microwave another 1-2 minutes until apples are tender. Allow to cool; to serve, crumble the biscotti into a stemmed glass and spoon on the apple mixture. Garnish with fresh mint leaves.
