Delicate Parsley Sauce

From Dorothy McNett's recipes at www.dorothymcnett.com. Serve this as a "dip" or "spread" for assorted roasted vegetables along with any grilled meat, etc. And, of course, any other fresh herbs could be snipped into this as well! You make the sauce!

2 tablespoons extra-virgin olive oil
3 tablespoons flour
1 cup good quality chicken, beef, or vegetable stock
1/2 cup milk
salt, if needed, but depends upon the broth
1/8 teaspoon freshly ground pepper

1 1/2 cups finely chopped parsley
zest and juice of 1/2 lemon
freshly grated Pecorino-Romano cheese, or other cheese as desired

In batter bowl combine oil, flour, vegetable broth, milk, salt, and pepper. Cook in microwave 2 minutes. Whisk well. Cook another 1 minute, to make a smooth sauce. Blend in the chopped parsley, zest and lemon juice. Use as a dip or spread for roasted vegetables, grilled meats, pasta, etc with grated cheese.
