See Also: Cheese Dishes · Grains · San Benito County Cooks · Side Dishes Polenta and Gorgonzola Bakesby Polly Marliani of Manteca, a regular customer at Dorothy McNett's Place in Hollister 1 batch cooked polenta Cook polenta, and pour into a greased flat jelly roll pan, spreading to about 1/2 inch thick. Cool completely. Then cut into squares or circles,using a cookie cutter if desired. In half of the pieces, cut a round circle in the center. Place a dab of Gorgonzola on the whole piece, place the one with the cut-out circle over it. Continue with the rest. Bake these at 350 degrees for 10-15 minutes. Serve warm. Polly says, "Just FAB!"
