Orange Sandwich Bread with Creamy Goat Cheese

From Dorothy McNett's recipes at www.dorothymcnett.com. This "quick" bread is "lovery" and uses baking powder rather than yeast so does not need any rising time, thus is known as a quick bread. Slice this for sandwiches such as tuna apple salad or smoked chicken, it is wonderful. Or, just slice and enjoy with a dab of fresh goat cheese, etc.

3 cups all-purpose unbleached flour
1 tablespoon baking powder
1/2 cup raw sugar
1/2 teaspoon sea salt
1 egg
zest of 1 orange
1/4 cup orange juice
3/4 cup milk
2 tablespoons olive oil or melted butter
1 cup finely chopped walnuts, optional (or spiced pecans!)
creamy goat cheese, or other soft cheese, for spreading

Preheat oven to 350 degrees. Brush a 8 by 4 inch loaf pan with oil and set aside. (or use a small bundt style cake pan, etc. ) Carefully "sift" and measure the flour into a bowl. Whisk in the baking powder, sugar and salt. In another bowl, whisk the egg and add the remaining ingredients. Blend in the flour and mix with a few swift strokes, stirring until just barely blended. Scoop into prepared pan. Bake 40-45 minutes. Place pan on cooling rack, allow to stand about 15 minutes before inverting. Slice and serve with some creamy cheese or other sandwich filling as desired.!
