Strawberry and Baby Greens Salad

From Dorothy McNett's recipes at Serves 2-4. Fresh strawberries are now being noted as one of the best de-toxifying foods to eat!

1 cup sliced fresh red-ripe strawberries
1/2 teaspoon raw sugar or local honey
about 1/2 teaspoon best quality balsamic vinegar

1 - 2 really red ripe strawberries
2 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar, more or less
pinch of sea salt
1 teaspoon raw sugar or honey, to balance the flavors

fresh local baby greens, washed and dried
fresh brie or goat cheese, room temperature
semi-coarse sea salt of choice

Combine the 1 cup berries with sugar or honey. Sprinkle with balsamic and set aside. In glass measuring cup, mash the ripe berries and then whisk in the olive oil, vinegar, salt, and sugar to make dressing. Arrange lettuce and greens on individual salad plates, place some marinated berries on the side and put on a small round of brie or goat cheese. Drizzle all with the dressing. Sprinkle with a few grains of semi-coarse sea salt. (black or coral especially wonderful here!)
