Herbed Couscous

From Dorothy McNett's recipes at www.dorothymcnett.com. Use a combination of herbs, as desired.

1 cup water
1 cup dry couscous
2 tablespoons unsalted butter or olive oil
1/2 teaspoon salt
1/2 cup fresh finely chopped herbs (basil, sage, parsley, rosemary, oregano...)

Combine 1 cup water and 1 cup dry couscous in glass or ceramic batter bowl. Add butter, salt and finely chopped fresh herbs. Stir well. Cook in microwave for 4 minutes. Fluff with fork. Or heat water in a saucepan and bring to a boil. Add the couscous, butter, salt and herbs and stir to blend well. Cover and let stand about 5 minutes.
