Prawn Salad with Sandwiches

5-6 jumbo prawns per person
Olive oil for brushing
paprika or Zip for sprinkling
1 small head butter lettuce per person
sliced cucumbers
1-2 tablespoons mayonnaise per person
salt and pepper to taste

2-3 hard cooked eggs, chopped
1 sliced green onion, slivered
1/4 cup mayonnaise
1/4 teaspoon dry mustard
1 teaspoon white wine vinegar
1 teaspoon sugar
pinch of fine sea salt
freshly grated pepper
1 dill pickle, chopped
slices of white and/or dark bread

Peel and devein prawns. Brush with olive oil and sprinkle with Zip. Microwave, covered, 2 minutes. Stir. Microwave another 2-3 minutes, or until prawns have turned pink. Cool. Chill lettuce and when ready to serve, place each head in salad bowl. Nestle prawns and cucumber slices among leaves. Combine mayonnaise with capers, salt and pepper and then pour over salad. In meantime, combine eggs, onion, mayonnaise, mustard, vinegar, sugar, salt and pepper, and dill pickle. Spread completely over bread slice. Top with remaining slice. Cut and serve with salad.
