Apple Muffins

From Dorothy McNett's recipes at www.dorothymcnett.com. Olive oil and apples turn an ordinary muffin into a popular new taste treat!

extra virgin olive oil, for brushing the pan

2 cups all-purpose unbleached flour OR 2 cups white unbleached whole wheat flour
3/4 cup raw sugar
2 teaspoons baking powder
1 teaspoon soda
1/2 teaspoon sea salt
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
2 eggs
3/4 cup buttermilk
1/3 cup extra virgin olive oil
2 small apples, grated (about 1 cup or a tad bit more, but too much will make the muffins heavy)

Preheat oven to 400 degrees. Line muffin pans with cupcake liners and brush with oil, or if not using the paper liners, simply brush bottom and half way up the sides of each muffin cup with oil. In batter bowl, whisk flour, sugar, baking powder, soda, salt, and spices. In another bowl, whisk together eggs, buttermilk, and oil. Add apples and combine with dry ingredients only to mix to moisten. Fill cups nearly full. Bake 20-30 minutes, until golden.
