Peach Ice Cream Sauce

From Dorothy McNett's recipes at www.dorothymcnett.com. Serve warm over ice cream or other desserts, or just eat it as it is! Also, a beautiful presentation is to put several tablespoons of the warm sauce into a stemmed glass or other small bowl, and then top with a small scoop of vanilla ice cream. It is a reverse ice cream sundae!

1 cup raw sugar
3 tablespoons cornstarch
1/4 teaspoon sea salt
1 cup water
zest of the orange and lemon
1/2 cup orange juice
2 tablespoons lemon juice
3-4 peaches, diced
2 tablespoons unsalted butter, or extra virgin olive oil

In heavy bottomed saucepan, combine all ingredients. Bring to a boil, reduce to simmer, and cook uncovered for 10-15 minutes, or until thickened and peaches are tender, stirring often. Cool and serve over cakes or ice cream. Wonderful over gingerbread, chocolate cakes, etc.
