Hearty Apple Dessert

From Dorothy McNett's recipes at www.dorothymcnett.com. A good side dish, main dish, dessert or appetizer! Make it ahead and serve as a tasty complement to any meal, and it is great to take to parties and events.

12-16 oz. egg noodles, cooked

1/4 cup unsalted butter
1/2 cup cottage cheese
3 eggs
2 - 3 apples, diced
3/4 cup raisins or other dried fruit (cranberries are wonderful!)
1/4 cup pistachio nuts
1 teaspoon cinnamon
zest of 1 orange or lemon
3/4 cup crystalline brown sugar
1/4 teaspoon fine sea salt
1/2 teaspoon baking powder

Use a pasta cooker or other deep cooking pot to cook noodles until tender. Drain well and set aside. (I usually snip the noodles into smaller pieces, but it is not necessary) Preheat oven to 350 degrees. Butter a 2 quart ceramic casserole. Melt the butter and combine with remaining ingredients. Pour into baking dish and bake 1 hour or more, until brown and crusty. Serve hot or room temperature as a side dish with a meal, or as a dessert.
