Grilled Chicken Sandwiches

From Dorothy McNett's Recipe Book at

2-3 chicken breasts, flattened
good quality mustard
fresh or dried herbs, as desired (basil, thyme, cilantro)
lettuce or other greens
mayonnaise or barbecue sauce
spiced anchovies, optional (sub roasted red pepper strips)
brown and white bread slices
mayonnaise, butter, etc.

Flatten the chicken breasts with a meat pounder to make evenly shaped pieces. Brush lightly with a good quality mustard, or use plain olive oil. Sprinkle with your seasonings. Place on a hot grill and cook and turn until chicken is done and is a golden brown. Set aside. Prepare brown and white bread slices with mayo and butter. Assemble the sandwich, using lettuce or spinach leaves, topping with a spiced anchovy for those who dare.
