Mini-Mini BLT

From Dorothy McNett's recipes at Use this one for quick hors d'oeuvre.

small hard toast squares or crackers
2 tablespoons extra virgin olive oil
2 - 4 cloves garlic, minced
1 oz. package dried tomatoes, minced
1/2 cup water
crisp bacon, finely chopped
finely chopped lettuce and parsley

In a small saucepan, heat oil and add the garlic and minced dried tomatoes and cook 1 minute. Add the water and cook for about 5 minutes, or until water has reduced and mixture is spreadable. Cool. Cook the bacon until crisp and place on paper towels to cool. Crumble it finely. Set aside. Chop lettuce finely. To assemble, spread the tomato mixture on crackers, dollop with bacon bits and lettuce.
