Pepper Corn Meal Muffins

From Dorothy McNett's Recipe Book at

1 1/2 cups all-purpose flour, sifted or lifted
1 tablespoon baking powder
1 teaspoon fine sea salt
1/4 cup brown sugar
3/4 cup yellow cornmeal
1 egg, well beaten
1 cup milk
1/3 cup olive oil
1/2 cup coarsely chopped red or green bell pepper
2 tablespoons finely diced onion
1/2 cup grated Emmenthal
paprika for top

Preheat oven to 400 degrees. In batter bowl, whisk together flour, baking powder, salt, sugar, and cornmeal. In another bowl, whisk together egg, milk, and oil. Add to flour mixture, stir to dampen flour. Add vegetables and cheese and mix gently. Pile into paper-lined baking cups. Sprinkle with paprika. Bake 25 minutes
