Acorn Squash with a Dash of Curry

From Dorothy McNett's recipes at www.dorothymcnett.com. Using the microwave to partially cook the squash so that you can easily slice it into serving sized pieces and then grill or broil!

acorn squash
butter or olive oil
a good quality curry powder, or a combination of spices
sea salt and freshly ground pepper

Wash the squash and place on a glass or ceramic pie plate. Cook in microwave 3 - 4 minutes. Remove and allow to cool enough so that you can handle it nicely and then slice it in half, remove the seeds and membrane. Heat a stove-top grill or griddle, or flat pan. Slice squash into 1 inch thick slices, peeling or not. Brush with oil or butter and sprinkle with seasonings. Grill 2-3 minutes on each side, or until tender and browned. Serve.
