Chicken Tamales

1 chicken, cut into pieces, or use selected parts up to 3 pounds
1 onion, chopped
3 cloves garlic, minced
1 1/2 teaspoons fine sea salt
1/2 teaspoon dried red pepper, or 1 small dried red pepper, crushed
3/4 cup water
3 tablespoons tomato sauce
zest of 1 lemon
1/2 teaspoon ground cloves
1/2 teaspoon cumin
snipped fresh cilantro, if desired

Combine all ingredients in deep frying pan with a heavy bottom. Bring to a boil, reduce to simmer, and cook until chicken is tender about 45 minutes. Pull chicken apart into strips and add to remaining liquids. Cook gently until all liquids have reduced and the mixture is suitable for a filling for your tamales.
