Salmon Casserole Deluxe

From Dorothy McNett's recipes at A favorite way to cook the freshest of salmon and then turn it into a wonderful nutritious main dish casserole.

1-2 salmon steaks or fillets
lemon or orange zest
juice of half a lemon, or about 1-2 tablespoons orange juice
1/2 cup uncooked oatmeal
2 eggs
1 small onion, finely chopped
1/2 green pepper, finely chopped
2 tablespoons minced fresh parsley
1 teaspoon soy sauce
1/4 teaspoon fine sea salt
1/4 teaspoon pepper
1 tablespoon sesame seeds or hemp seeds

Arrange fish steaks on glass or ceramic plate or pie dish. Sprinkle with lemon zest and juice. Cover loosely with waxed paper or a large lettuce leaf. Cook in microwave, using 2 minutes per steak as a guide. When done, fish should flake easily. Cool. Remove skin and bones, crumble into pieces. Add oatmeal, eggs, onion, pepper, parsley, sauce, salt, and pepper. Mix well. Pile into a round glass or ceramic baking dish, sprinkle with sesame or hemp seeds and paprika. Cook in microwave on 70% (medium-high) power setting for 8-10 minutes. Cool slightly and serve.
