Salmon Casserole with Smoked Paprika
From Dorothy McNett's recipes at www.dorothymcnett.com. A favorite way to cook the freshest of salmon and then turn it into a wonderful nutritious main dish casserole.
1-2 salmon steaks or fillets
Arrange fish steaks on glass or ceramic plate or pie dish. Sprinkle with lemon zest and juice. Cover loosely with waxed paper or a large lettuce leaf. Cook in microwave, using 2 minutes per steak as a guide. When done, fish should flake easily. Cool. Remove skin and bones, crumble into pieces. Add oatmeal, eggs, onion, pepper, parsley, sauce, salt, and pepper. Mix well. Pile into a round glass or ceramic baking dish, sprinkle with sesame or hemp seeds and smoked paprika. Cook in microwave on 70% (medium-high) power setting for 8-10 minutes. Cool slightly and serve.
