Salmon Casserole with Smoked Paprika

From Dorothy McNett's recipes at A favorite way to cook the freshest of salmon and then turn it into a wonderful nutritious main dish casserole.

1-2 salmon steaks or fillets
lemon or orange zest
juice of half a lemon, or about 1-2 tablespoons orange juice
1/2 cup uncooked oatmeal
2 eggs
1 small onion, finely chopped
1/2 green pepper, finely chopped
2 tablespoons minced fresh parsley
1 teaspoon soy sauce
1/4 teaspoon fine sea salt
1/4 teaspoon pepper
1 tablespoon sesame seeds or hemp seeds
smoked paprika

Arrange fish steaks on glass or ceramic plate or pie dish. Sprinkle with lemon zest and juice. Cover loosely with waxed paper or a large lettuce leaf. Cook in microwave, using 2 minutes per steak as a guide. When done, fish should flake easily. Cool. Remove skin and bones, crumble into pieces. Add oatmeal, eggs, onion, pepper, parsley, sauce, salt, and pepper. Mix well. Pile into a round glass or ceramic baking dish, sprinkle with sesame or hemp seeds and smoked paprika. Cook in microwave on 70% (medium-high) power setting for 8-10 minutes. Cool slightly and serve.
