Gorgonzola or Stilton Pasta Sauce

1/4 to 1/3 pound Gorgonzola or Stilton cheese
First cook pasta and while it is still cooking, place the above ingredients in a pan (stovetop) or in a batter bowl (microwave). Gently heat 1-2 minutes to melt and blend ingredients. Add about 1-2 tablespoons pasta cooking water, if necessary, to give a good consistency. Snipped green onions, baby cooked shrimp, slivered red roasted peppers all make a good accent for the top when serving.
