Roast Beef with Potatoes

3-4 pound evenly cut chuck roast or eye of the round
Soak the top of the clay pot while you prepare the meat in the bottom. Sprinkle it with the seasonings, and place the potatoes evenly around the roast. Slice the onion and place over the meat. Drain the lid, and place over the meat. Roast at 425 degrees for 1 1/2 hours, or until tender and browned.
