Vegetable Soup of the Season!

From Dorothy McNett's recipes at Fresh vegetable soup making...your microwave (aka the vegetable cooker) it is a wonderful method for 3-4 servings of natural nutritious soup. Cut the recipe in half for 1-2 servings!

4 tablespoons butter or olive oil
1/2 to 1 teaspoon sea salt
1/4 teaspoon black pepper, freshly ground
1/8 teaspoon cayenne
1/2 teaspoon dry mustard
1 onion, finely chopped
about 3 - 4 cups finely chopped fresh vegetables
2-3 cloves garlic, minced
4 tablespoons flour
4 cups good quality vegetable, chicken or beef stock

freshly grated Parmigiano-Reggiano cheese

In glass or ceramic batter bowl, combine butter, salt, pepper, cayenne, mustard, onion, vegetables, and garlic. Cover with glass or ceramic lid or waxed paper and cook in microwave for 5 minutes. Stir. Cook another 3-4 minutes or until the vegetables are tender. Whisk in the flour and then the broth. Cook for 5 minutes. Whisk well. Cook 5-8 minutes on half power. Taste and correct the seasonings if needed. Serve garnished with croutons and grated cheese.
