Banana Bran Muffins

From Dorothy McNett's recipes at www.dorothymcnett.com. These are great for breakfast and brunch. They can be made ahead as they are good at room temperture as well as hot out of the oven!

1 large egg
3 bananas (about 1 1/2 cups pulp)
1/4 cup extra virgin olive oil
1 cup bran cereal
1 1/2 cups all purpose unbleached flour
2 teaspoons baking powder
1/2 teaspoon soda
1/2 teaspoon sea salt
1/3 cup raw sugar
2 tablespoons amaranth or wheat germ, or finely chopped nuts, seeds, etc.

Preheat oven to 350 degrees. In batter bowl, whisk egg and then stir in banana, oil, and bran. In another bowl whisk together the flour, baking powder, soda, salt, and sugar. Add to first mixture and mix only enough to dampen the flour. Fill muffin cups 3/4 full. Sprinkle with amaranth. Bake 20-25 minutes.
