They can be made ahead as they are good at room temperture as well as hot out of the oven! 1 large egg Preheat oven to 350 degrees. In batter bowl, whisk egg and then stir in banana, oil, and bran. In another bowl whisk together the flour, baking powder, soda, salt, and sugar. Add to first mixture and mix only enough to dampen the flour. Fill muffin cups 3/4 full. Sprinkle with amaranth.
