Saturday Night Special

flour tortillas
olive oil
1 pound ground beef or turkey, or firm tofu
2-3 cloves garlic, slivered
1/2 teaspoon fine sea salt
1/4 teaspoon freshly ground white peppercorns
1-3 teaspoons Zip or other chili powder
1 can kidney beans, drained
2 tablespoons Vidalia Onion Salad Dressing
1/2 cup shredded cheddar or gouda cheese
1 head lettuce, chopped
salsa, your choice of hot or mild

Brush tortillas with a little olive oil. Micorwave one at a time on a microwave bacon rack until crispy and brown, about 3 minutes. Place on a plate. In meantime, cook ground meat with garlic, salt, pepper, and Zip until meat is done and crumbly. Adjust seasonings, adding chili as desired. Blend the Vidalia dressing with the kidney beans. Pile the beans on the tortilla shells, add some cooked meat mixutre, add some cheese, lettuce, and top with salsa. Olives are good with this.
