From Dorothy McNett's recipes at www.dorothymcnett.com. When fresh cherries are not available, use canned or defrosted frozen ones. If the stems have been removed, just simply use a spoon to roll the cherries in the chocolate.

Wash, pit, and dry the cherries carefully with paper towels. Twist or roll up one mint leaf and tuck into the center of each cherry. Melt the chocolate in a glass measuring cup in microwave, using 1 minute per pound of chocolate as a guide. Dip each cherry into the chocolate and place on waxed paper to harden. Serve within a few hours for best presentation.
