Scrambled Eggs with Smoked Salmon Salad

From Dorothy McNett's recipes at Don't forget how easy and nutritious eggs can be, and when added to a bowl or plate of local salad greens you will have a salad in minutes!

2-3 eggs
1 teaspoon water or milk
salt and pepper, as desired
crumbled smoked salmon
butter or oil for the skillet
fresh greens (lettuce, kale, endive, romaine, etc.)
drizzles of extra virgin olive oil
fresh parsley

Whisk the eggs, adding water, salt and pepper. Heat skillet with butter or oil to heat thoroughly but not too hot. Add scrambled egg mixture and gently stir it around until it is starting to set up. Add the salmon and cook and stir gently to finish the eggs but not to over-mix the salmon. Place fresh local greens of the season in a salad bowl. Toss in the egg and salmon mixture. Drizzle with a little olive oil, as desired, and garnish with parsley.
