Scrambled Eggs with Smoked Salmon Salad

Whisk the eggs, adding water, salt and pepper. Heat skillet with butter or oil to heat thoroughly but not too hot. Add scrambled egg mixture and gently stir it around until it is starting to set up. Add the salmon and cook and stir gently to finish the eggs but not to over-mix the salmon. Place fresh local greens of the season in a salad bowl. Toss in the egg and salmon mixture. Drizzle with a little olive oil, as desired, and garnish with parsley.
