White Bean Dip or Spread

1 cup cooked and drained white beans (cannelini)
2-3 cloves garlic, minced
juice of 1/2 to 1 lemon
1/4 teaspoon fine sea salt
1/4 teaspoon pepper
1/2 teaspoon Herbes de Provence or other herbs of choice
extra-virgin olive oil to make right consistency

Combine all ingredients except for olive oil in food processor or blender and process until creamy. Drizzle in the oil until the consistency is right. Taste, correct seasonings, and serve.
