Tuna Noodle Casserole

8 oz. egg noodles, or other pasta
1 can best quality flaked tuna
1/4 cup olive oil or butter
1 cup sliced fresh mushrooms
2 green onions, sliced
1/4 cup flour
1/2 to 3/4 teaspoon fine sea salt
1/4 teaspoon ground white pepper
1/2 teaspoon good quality curry powder
2 cups milk
crushed corn flakes

Cook noodles in boiling salted water until done. Drain and put into a 2 quart capacity baking dish which has been lightly buttered or oiled. Preheat oven to 400 degrees. In batter bowl, combine oil, mushrooms, and green onions. Microwave on high 3 minutes. Whisk in flour, salt, pepper, and curry powder. Blend in milk. Microwave on high 2 minutes. Whisk well. Microwave another 2 minutes to thicken. Add tuna to noodles and pour over the sauce. Crush corn flakes and sprinkle a thin layer over the top. Bake 20-30 minutes.
