Poached Pears with Marsala

4-5 Bosc pears, cored
2 cups Marsala or sweet dessert wine
2 cups white wine
1/2 vanilla bean, slit
1/2 cup sugar
1/4 teaspoon fine sea salt
1/4 teaspoon nutmeg

Peel and core pears. In deep pan bring wines, vanilla bean, sugar, and salt to a boil. Add the pears. Reduce to simmer and simmer 30-40 minutes or until pears are tender. Remove pears to a beautiful bowl. Reduce the liquid to a syrup and pour over the pears at serving time.
