Broccoli Topping / Side Dish

From Dorothy McNett's recipes at www.dorothymcnett.com. This colorful topping or sauce is perfect for serving alongside grilled chicken, turkey cutlets, and burgers of all kinds. I like to vary the sauce by using colored broccoli spears, such as green, white, yellow and purple. 3 tablespoons unsalted butter or extra virgin olive oil
1 tablespoon unbleached all purpose flour
2-3 cloves slivered garlic
1/4 teaspoon fine sea salt
freshly ground peppercorns
3 - 4 spears raw broccoli, very finely minced
2 tablespoons water or broth
2 tablespoons cream
pinch of nutmeg

In glass or ceramic batter bowl, combine butter or oil with the flour and then add garlic, salt, pepper, broccoli pieces and water or broth. Cover with ceramic plate or waxed paper. Cook in microwave 3 minutes. Stir, adding another minute if needed until the broccoli is done. Blend in cream and nutmeg. Serve with cheese souffle or other main dishes, or alongside any fondue recipe, etc...
