Ground Beef and Sun-Dried Tomato Sauce

2 tablespoons olive oil
In skillet, heat oil and saute garlic, onion, carrot, and parsley several minutes to cook but not to brown. Add the meat and water or wine. Break up into very small pieces, cooking covered at a low heat and stirring often to make the sauce "dissolve" into a fine mixture rather than chunky. Add salt, pepper, nutmeg and tomatoes. Correct seasonings, and serve with freshly cooked pasta. Sprinkle with cheese.
