Ground Beef and Sun-Dried Tomato Sauce

From Dorothy McNett's recipes at www.dorothymcnett.com. Quick, easy, fun and tasty! Instead of the sun-dried tomatoes when nice ripe tomatoes are in season, simply very finely dice some to make about 1/2 - 3/4 cup and add them instead!

2 tablespoons extra virgin olive oil
3-4 cloves garlic, slivered
1/2 onion, very finely chopped
1 small thin carrot, very finely chopped
2-3 sprigs fresh parsley, chopped
3/4 to 1 pound ground beef, or meat of your choice
2 tablespoons water or red wine
1/2 to 1 teaspoon sea salt
1/4 to 1/2 teaspoon ground pepper
pinch of ground nutmeg
1/2 cup sun-dried tomatoes, slivered (or 1/2 - 3/4 cup finely diced fresh ones)
1/4 cup freshly ground Parmigiano-Reggiano cheese

In skillet, heat oil and saute garlic, onion, carrot, and parsley several minutes to cook but not to brown. Add the meat and water or wine. Break up into very small pieces, cooking covered at a low heat and stirring often to make the sauce "dissolve" into a fine mixture rather than chunky. Add salt, pepper, nutmeg and tomatoes. Taste, adding more salt or pepper to get it just right, and serve with freshly cooked pasta. Sprinkle with cheese.
