Apricot or Peach Ice Cream

5 cups fresh sliced fruit
3/4 cup sugar
3 tablespoons lemon juice
1 teaspoon pure vanilla extract
1/8 teaspoon fine sea salt
2 cups heavy cream, chilled

Chop 1 cup of the fruit and set aside. In a food processor fitted with the metal blade, combine the remaining fruit, sugar, lemon juice, vanilla, and salt. Process until the mixture is pureed. Transfer to a bowl and stir in the cream and the reserved chopped fruit. Chill for several hours and then freeze according to the ice cream freezer directions.
