Dessert Crepes

1 recipe Crepe Batter
1/3 cup orange liqueur or Cognac, optional

Make crepes as described in the recipe for Crepe Batter. Preheat broiler. Butter a baking dish. Spread a little butter on the underside of each crepe, and then spread with a thin layer of jam. Roll or fold them and arrange in buttered dish. Sprinkle with a melted butter and sugar. Place under the broiler for several minutes, or whatever it takes to caramelize the top without burning the sugar. If using the liqueur, heat it in a glass measuring cup for 15 seconds in the microwave. Pour over hot crepes, ignite. Serve immediately.
