Zucchini and Tomato Side Dish
From Dorothy McNett's recipes at www.dorothymcnett.com. Too simple, but that is what summer vegetables in season are all about! This also is great served at breakfast or brunch along with egg dishes, pancakes, etc.
1 tablespoon corn or peanut oil
Heat oil in wok or stir fry pan, or a deep skillet. Add garlic and cook 30 seconds. Add zucchini and cook 2 minutes, add tomatoes and cook 2-3 minutes. Add marinade or mustard, sprinkle on basil or other herbs, and serve.
