Almond Peaches

From Dorothy McNett's Recipe Book at Use fresh apricots or nectarines as well!

2-3 fresh peaches, peeled
1/2 cup orange juice
1/2 cup chopped almonds
1 tablespoon butter
1/3 cup sugar
several drops of almond extract or almond oil
1-2 tablespoons chopped dried fruit, or crystalline candied ginger
mascarpone or ice cream, as desired

Place whole peaches in microwave dish and pour over orange juice. Cover. Microwave on high 2-3 minutes. Cool slightly and slice in half, remove pit. In glass measuring cup, combine chopped almonds and butter and microwave on high 1-2 minutes, or until almonds have toasted. Add sugar, almond flavoring, and fruit. Arrange peaches on plate, stuff with the nut mixture, and drizzle with the poaching liquids. Serve warm or cold with a small amount of mascarpone or ice cream.
