Cauliflower with Sauce

1 head cauliflower
2 tablespoons butter or extra virgin olive oil
2 tablespoons flour
1/4 teaspoon sea salt
1/4 teaspoon ground pepper
1/2 teaspoon dry mustard powder
1 cup milk
1/4 cup grated cheddar or Emmenthal cheese
about 1 teaspoon paprika (the smoked paprika is wonderful with this!)

Wash and trim the cauliflower, leaving it as a whole head. Place in glass or ceramic batter bowl or any other microwave safe bowl it will fit into easily, stem side up. Sprinkle with 1 tablespoon water. Cover with glass or ceramic plate. Cook in microwave using 5 minutes per pound as a good guide for timing. One standard sized head usually cooks in about 6 - 8 minutes. Remove the head to a serving platter and set aside. In the batter bowl combine butter or oil, flour, salt, pepper, and mustard. Cook 30 seconds. Whisk in milk. Cook 1 minute. Whisk. Cook another another 1-2 minutes, or until thickend, adding the cheese at the last 30 seconds or so and whisk until melted. Drizzle the head of cauliflower with the sauce. Sprinkle with paprika. Serve!
