Clam Toasties

From Dorothy McNett's recipes at This makes a fabulous appetizer, or a nice side dish. Great for holiday entertaining!

1/2 cup unsalted butter, softened or melted (or use extra virgin olive oil)
1/2 cup breadcrumbs
1/4 cup chicken or vegetable broth (or use the reserved clam juices)
2 - 3 tablespoons finely minced fresh chives
4 cloves garlic, minced
2 tablespoons fresh parsley, chopped
1/2 teaspoon dried herbs, as desired (Herbs d Provence)
1/4 teaspoon sea salt
1/4 teaspoon freshly ground pepper
2 cans minced clams, drained but reserve the juices

24 or more toast rounds, or crispy crackers

Preheat oven to 375 degrees. Line baking sheet with a silicone mat or parchment paper. Combine all ingredients except crackers or toast rounds and mix well. Add a little clam juice if mixture seems too dry to spread on the toast rounds. Spread mixture on toast rounds or crispy crackers. Bake 8-10 minutes.
