Scandinavian Meat Patties in Chafing Dish

From Dorothy McNett's recipes at www.dorothymcnett.com. Instead of patties, these are often known as meat flats. If you don't happen to have any cooked mashed potatoes in the refrigerator, cook one medium potato for 3-4 minutes in microwave and allow to cool. Mash and use.

1 tablespoon butter
1/4 cup very finely minced onion
1/2 cup cooked mashed potatoes
1/4 cup fine bread crumbs
1/2 to 3/4 pound lean ground beef
1/4 cup cream
1/2 teaspoon sea salt
1 egg
1/8 teaspoon ground nutmeg

2 tablespoons olive oil
1 tablespoon butter
1 tablespoon flour
1/2 cup cream

Heat butter and saute onion until tender and light brown. Combine with mashed potatoes, breadcrumbs, meat, 1/4 cup of the cream, salt, egg, and nutmeg. Shape into small flat patties. Heat butter and oil in a large saute pan or skillet, and cook meat until brown, carefully turning once. When done, remove from pan to a chafing dish for serving, if desired. Reheat the saute pan on high, sprinkle the flour into the juices, blending well. Reduce heat, add remaining cream and stir until mixture thickens slightly. Pour over the meat flats and serve in the chafing dish over low heat. If not using a chafing dish, simply serve on a platter and drizzle the sauce over.
