Hot Walnuts or Peanuts

From Dorothy McNett's recipes at www.dorothymcnett.com. Pair these with a nice selectionn of cheeses, sliced fruits, etc. for an appetizer. Or toss them into a salad, etc.

1 - 2 tablespoons extra virgin olive oil
1/2 - 3/4 teaspoon chile powder, or Cayenne
2-3 cups whole walnuts, or peanuts
1/2 teaspoon vanilla
1/2 teaspoon coarse or fine sea salt

In glass or ceramic batter bowl, combine all ingredients. Cook in microwave 1 minute. Stir. Cook another 1 minute, and stir. Continue another 1-2 minutes, or until walnuts or peanuts are just beginning to toast. Allow to cool, and serve.
