Greens and Citrus Salad

From Dorothy McNett's recipes at A wonderful holiday salad, and it can be tossed and served immediately or it also refrigerates nicely for several hours before serving.

deep green salad leaves (spinach or leaf lettuce, kale, etc)
2 thinly sliced green onions
1/3 cup extra-virgin olive oil
1/3 cup sherry or fruit flavored vinegar
1 teaspoon raw sugar or honey
1/4 teaspoon sea salt
freshly ground pepper
zest of 1 lime or lemon
zest of 1 orange
1 -2 oranges, peeled and cut into slices
1 pink grapefruit, peeled and cut into slices
1/3 cup pine nuts, or other nuts of your choice
feta cheese or other cheeses, as desired, cut into small bites

Wash and dry the greens and put into a large beautiful salad bowl. In glass measuring cup, whisk together the oil, vinegar, salt, pepper, lime zest, and orange zest. Peel oranges and grapefruit and slice into thin, juicy slices and add to the salad bowl along with the pine nuts and diced feta. Toss the dressing over everything and serve.
