Baked Macaroni and Cheese Casserole

From Dorothy McNett's Recipe Book at www.dorothymcnett.com. Make these with Smoked Chicken Apple Sausages for a dynamite taste.

1 pound shell or elbow macaroni
water
salt
olive oil

1/3 cup butter or olive oil
1/3 cup flour
1 teaspoon fine sea salt
1/4 teaspoon freshly ground pepper
1/2 teaspoon ground mustard
2 cups milk
1 cup grated cheddar or gouda cheese
1-2 smoked chicken apple sausages, optional

In pasta cooker, bring at least 8 cups water to full rolling boil. Then add about 1 tablespoon salt and 1 teaspoon of oil. Bring back to the boil. Add the pasta. Bring back to a boil, and then start timing as per the package directions. (Probably 7 - 11 minutes, depending on thickness and size of pasta). When done, drain and place pasta in a 9 by 13 baking dish. Preheat oven to 350 degrees. In batter bowl, combine butter or oil, flour, salt, mustard, and pepper. Microwave on high 30 seconds. Whisk in milk. Microwave on high 2 minutes. Whisk well. Microwave another 2-3 minutes, or until mixture has thickened. Add the cheese and stir until cheese has melted. Stir into the macaroni. Slice the sausages, and toss into the mixture. Sprinkle with additional cheese, if desired. Bake until browned and bubbly, about 40 minutes.
