Cheese Puffs

From Dorothy McNett's Recipe Book at

1/2 cup water
2 tablespoons butter
a few grindings of white pepper
pinch of nutmeg
pinch of sea salt
1/2 cup flour
2 large eggs
1/3 cup finely grated Swiss or Cheddar
1 egg, beaten for the glaze

Preheat oven to 325 degrees. In saucepan bring water, butter, pepper, nutmeg, and salt to boil. Add flour all at once, stirring constantly. Remove from the heat and stir well to mix thoroughly. Return to heat and stir until the paste leaves the sides of the pan. Remove from heat. Lightly beat eggs and using the same wooden spoon, add the eggs to the flour paste a little at a time,beating well, until smooth, thick and glossy. Mix in most of the cheese. Using a pastry bag fitted with a small plain nozzle, pipe out 1 inch balls of dough onto parchment lined baking sheet. Brush with the beaten egg, smoothing out the tops a little. Sprinkle with the remaining cheese and bake 25 minutes,or until they are puffed and golden brown. Serve hot.
