Baked Potato Strips

From Dorothy McNett's Recipe Book at

2-3 russet or other baking potatoes
olive oil
sea salt (good time to use the herbed or infused varieties)

Peel potatoes and cover with cold water for at least 10 minutes. Preheat oven to 400 degrees. Line a baking sheet with sides with parchment paper or use a silicone mat. Cut potatoes into slices or slivers and scatter over sheet. Sprinkle with olive oil and salt. Bake uncovered, for 30 minutes or until potatoes are browned and done.
