Guacamole

From Dorothy McNett's recipes at www.dorothymcnett.com. This one is full of fabulous avocado flavor. Feel free to add diced tomatoes, etc. as desired. I like to make this simple like this recipe and serve it with thinly sliced apples for the dippers. This is a perfect pairing for a smooth buttery Chardonnay.

2-3 ripe avocados
zest of 1/2 -1 lime
a few drops of lime juice
1/4 cup finely chopped onion
1/4 teaspoon fine sea salt (maybe more, adjust as you go)
1/4 teaspoon or more cayenne or dried chipotle
2-3 tablespoons chopped fresh cilantro

1-2 unpeeled apples, thinly sliced
sprinkles of black or coral semi-coarse sea salt

Mash the avocado along with the remaining ingredients until soft but still a little chunky. Adjust seasonings...some like it hot, some like it not hot. Wash the apples very well and then cut into thin slices. Arrange on a plate and sprinkle with a few grains of the salt. Use the apple slices for dipping into the guacamole.
