Tuna Salad with Sesame Dressing ala Gladiolus

From Dorothy McNett's recipes at www.dorothymcnett.com. Easy enough to add more ingredients if feeding more than 2-3 people! Use a can of best quality tuna, or simply grill up a fresh tuna steak and add it to this mix. IF you can get organically grown fresh gladiolus, snip a few of the blossoms into this mix. And then use the remaining flowers as serving containers for the salad. Simply fill the flowers and arrange!

2 tablespoons soy sauce
2 tablespoons rice vinegar or champagne vinegar
1 teaspoon toasted sesame seed oil
1/2 teaspoon crystalline brown sugar
salt and pepper, as desired
1 tuna steak, grilled (or 1 can best quality tuna, drained)
1/2 to 1 cucumber, peeled and sliced or julienned
cherry tomatoes, or diced regular tomato
1/2 cup or more diced red bell pepper
2-3 green onions, sliced
handful snow peas, trimmed
1/2 cup or more bean sprouts
1/4 cup dried cranberries, or other dried fruit
1 cup dark green lettuce leaves, torn into bite sized strips
1 cup spinach leaves, torn into bite sized strips

fresh organic gladiolus, if desired

In glass measuring cup, whisk together soy sauce, vinegar, sesame oil, and sugar. Taste and correct seasonings. In a beautiful bowl, combine all ingredients and toss with dressing. Garnish and serve.
