Peanut Apple Zucchini Rounds

From Dorothy McNett's recipes at A tasty and fun appetizer or after school snack.

1 cup roasted salted peanuts
apple slices
zucchini slices
olive oil

In food processor with steel chopping blade in place, whirl peanuts with just a drizzle of olive oil until you have made peanut butter. Slice zucchini and apples evenly, spread one slice of each zucchini with peanut butter and top with apple slice. Brush with olive oil. Serve.
