Jasmine Rice

From Dorothy McNett's recipes at www.dorothymcnett.com. Asian cooks have always steamed their rice, and lately electric rice cookers have become very popular. A microwave oven is a natural steamer, and makes all rice cooking a breeze. You need a covered ceramic or glass dish. Serve this rice on a plate of fresh local greens, and dollop with any flavorful sauce or dressing. J:asmine rice is very popular in the Philippines to be served with all kinds of meats and seafood, etc.

1 cup Jasmine or other rice
2 cups water or broth of choice
seasonings or salt, as desired

Put all ingredients in a glass or ceramic batter bowl or covered casserole dish. Cover with a glass or ceramic lid (no plastic!) and cook on high for 5 minutes, then on 1/2 power for 14-15 minutes. Fluff with a fork and serve. Or, follow the instructions that came with your electric rice cooker, or cook it in a pan on the burner.
